Pinterest Cooking

Everything on Pinterest looks so yummy and is supposedly easy to make. I've been pinning a bunch of recipes I have wanted to try and of course I don't make any of them so I decided why not try. I picked a recipe that was pinned from the Beard and Bonnet blog. It's peanut butter and marshmallow sandwich cookies, sounds delicious right? They were pretty tasty but personally the fluff was a bit too much for me. Who knows maybe I added too much but I enjoyed the peanut butter cookies by themselves and will probably make them again. They have no flour so it's perfect for me and my gluten free lifestyle. Here is the recipe from the blog:

Peanut Butter & Marshmallow Sandwich Cookies
From Bakers Royale: Makes 24 cookies and 12 sandwiches
1 cup natural peanut butter
1 cup sugar
1 large egg, lightly beaten
1 tsp. vanilla extract
Marshmallow Fluff if using
Preheat the oven to 350°F and line baking sheets with either silicone mats or parchment paper.
Place all ingredients in the bow of a stand mixer and mix on low until combined. Use a small ice cream or cookie scoop and drop 1 ½ tablespoonful’s of dough onto the prepared baking sheets. Use a fork to flatten the mounds of dough and create a criss-cross pattern on each cookie.

Bake cookies for 10-12 minutes or until golden around the edges. Remove from the oven and rest on the baking sheet for a few minutes until the cookies firm up enough to transfer to cooling racks.
Once cooled spread at least 1 heaping tablespoonful of Marshmallow Fluff onto the back of one of the peanut butter cookies and top with another. Get wet wipes handy and dig in, these babies are messy and are sure to trigger fits of giggles.

Now here are some of my pictures of this baking journey

Yum peanut butter smell! Who doesn't love peanut butter??

The end result looked really good but...

For some reason after they sat for a little bit the fluff went all over. Super messy cookies for sure! Maybe I made a mistake along the way but if you try them be cautious.
Also don't mind the burnt one up front, oops!
